Why make homemade Sauerkraut?

Sauerkraut is basically fermented cabbage that has been shredded. I have talked before about the benefits of consuming fermented food. First, homemade sauerkraut is a great probiotic. The best part is that the bacteria involved in fermentation will all come from the environment that you live in. Making it all that much more effective. The bacteria begin to digest (breakdown) the cabbage. Making the nutrients more easily absorbed by the body.

Eating sauerkraut is so good for your gut flora that it may help a person be free of anxiety. I know that the better I digest what I eat, the calmer I feel.     This is really exciting. I am going to try it. But there is no vinegar, just sea salt, pepper corn and water. Wow.

      Hi Dawn, you are correct there is no vinegar! I am sure that you have heard of pickling things as well as fermenting things, well, vinegar is what makes the difference. Fermenting things do not require vinegar, but if you are wanting to pickle something there is a need to add vinegar. I would love to hear what you end up fermenting and how it turns out!
